Ingredients


Makes: 8 cups for 4 servings
  • 1 pkg Taco Seasoning (Pkg of 3)
  • 1 can (28 oz/796 ml) crushed tomatoes
  • 4 C (1 L) Vegetable Broth Mix, prepared
  • 1 can (15 oz/440 ml) lentils
  • 1 avocado, sliced
  • 1 C (250 ml) grated cheddar cheese
  • 4 Tbsp (60 ml) plain Greek yogurt
  • 1 C (250 ml) tortilla chips
  • Topping suggestions (optional): salsa, fresh cilantro, lime wedges, jalapeños

Preparation


 
  • In a Perfect Pan combine first four ingredients; bring to a boil and simmer 30 min.
  • Ladle soup into four bowls. Top with avocado, cheese, and a dollop of yogurt.
  • Garnish with tortilla chips and desired toppings.

Tip


 

Tip: To give the soup more body and robust texture, purée half, and then stir back in before serving.
