Preheat oven to 375° F. Coat chicken pieces with oil. Place crumb mix in resealable plastic bag. Working with a few pieces at a time, shake gently until evenly coated. Place on a Sheet Pan lined with a Bake & Roll.
Cook 15–20 min, until chicken is cooked through. Serve with your favourite dip, aioli, or gravy.
Tip: Make it vegetarian and swap chicken for tofu. Add leftovers to nourish bowls or use as poutine topper.
