Creamy Chowder
Perfectly balance your plate: enjoy 2 cups of Creamy Chowder and a side salad with your favourite Epicure salad dressing.
Ingredients
Makes: 8 servings
- 1 pkg Creamy Chowder Seasoning (Pkg of 3)
- 2 C (500 ml) milk
- 3 C (750 ml) cubed potatoes
- 3/4 C (180 ml) each diced celery and carrots
- 2 C (500 ml) water
- 1 can clams (10 oz/142 g), including broth
- Fines Herbes Topper Blend, to taste
Preparation
- Microwave:
- In a bowl, whisk seasoning with milk; set aside.
- In Multipurpose Steamer, combine potatoes, celery, and carrots with water. Cover and microwave until tender, 10–12 min.
- Stir in reserved seasoning mixture. Microwave, uncovered, for 15 min, stirring every 5 min until thickened.
- Stir in clams, including broth. Spoon into bowls and sprinkle with topper.
- Stovetop:
- In a bowl, whisk seasoning with milk; set aside.
- In Multipurpose Pot - 12 C , combine potatoes, celery, and carrots with water. Cover and cook until tender, 10–12 min.
- Stir in reserved seasoning mixture. Bring to a boil; remove from heat.
- Stir in clams, including broth. Spoon into bowls and sprinkle with topper.
Tip
Tip: Swap clam for 2 cups cooked shrimp, salmon, lobster, or crab and 1/2 cup water.
